Smoky Guacamole!

Guac dish.jpg

I have been making this guacamole for years, but per my usual cooking style, I rarely measure anything, so it’s a little bit different every time. My husband is my taste tester so if he tells me it needs more lime juice or salt or onion, I just adjust accordingly.

BUT now that I’m sharing recipes with all of you, it has forced me to be much more precise, which is actually a good thing because now I can more accurately re-make our favorite creations!

My uncle used to make a “purist” version of guac that was literally just salt and avocado. I think he must have added a little magic dust or something because it was SO delicious and I have never been able to re-create it without over or under salting. So instead I add 1000 ingredients to achieve my own version of delicious.

The secret to appropriately blending all the flavors in this guac is making sure the onion and cilantro are minced as small as possible. I almost pulverize them with my knife to make sure that each bite has a hint of all the flavors and to avoid ingesting a large chunk of raw onion (which can be unpleasant for the breath and the stomach). We eat this guac with pretty much every single Mexican-inspired meal or as a snack with chips or cut up veggies. Hope you enjoy it as much as we do!
